Tagliatelle all’uovo con pomodorini e basilico

– 5 uova intere

– un filo d’olio

– un pizzico di sale

Per la salsa:

– ½ kg di pomodorini datterini freschi

– olio extra vergine d’oliva qb

– sale qb

– pepe qb

– basilico a piacimento

Preparazione:

Tagliare quindi a striscioline.

Our chef Alessandro suggests a very simple recipe for this  August, by the way we want to test you: how good are you in preparing a fresh homemade pasta?

 Tagliatelle with

small tomatoes and basil

 Ingredients for 4 people:

To prepare pasta:

– 250 gr of durum wheat flour

– 250 gr of 00 type flour

– 5 whole eggs

– a little bit of olive oil

– a little bit of salt

To prepare the sauce:

– ½ kg of small fresh grape tomatoes

– extra-virgin olive oil to taste

– salt to taste

– pepper to taste

– basil as you like it

Preparation:

Mix the two different flours blending powerfully, then make the well-known “fountain” that you’ve seen for sure in some Barilla’s TV commercials, so put inside it the eggs, the salt and the oil. Knead it until you get a homogeneous mixture, which is the pasta for the Tagliatelle. Roll out the dough helping yourself with a rolling pin or using the sheeter. Cut thin strips of pasta. Cook them in boiling water with salt to taste.

In the meanwhile prepare the sauce, first of all wash the grape tomatoes and the cut them in segments, while you’re heating up a pan on the fire. When it’s really hot, put inside the oil followed by tomatoes, which are going to be just seared. Add salt, pepper and basil as you like it.

Your dish, perfect for summer, is ready! It’s time to taste it with a good bottle of San Mattia Rosso!
