Fagottino agli asparagi bianchi con crema di Monte Veronese e tartufo nero
Ingredienti per il fagottino (crespella):
3 uova
250gr farina
½ litro di latte
40gr di burro
1 pizzico sale
Ingredienti per il ripieno:
500gr asparagi bianchi
200gr ricotta fresca
100gr parmigiano
2 tuorli d’uovo
1 cipolla bionda
Ingredienti per la guarnizione:
½ litro di panna da cucina
200gr Monte Veronese
tartufo nero qb
vino Donna Francesca
Preparazione crespella:
In una ciotola versare farina, pizzico di sale e ½ litro di latte. Lavorare fino ad ottenere un composto omogeneo. Sbattere le uova e aggiungerle al composto, mescolare energicamente. Incorporare il burro morbido e amalgamare. Lasciare riposare mezz’ora.
Scaldare una padella antiaderente, fondervi dentro una noce di burro; versare il preparato aiutandosi con un mestolo da cucina, ruotando rapidamente la padella distribuirlo uniformemente.
Cuocere un minuto, evitare che la crespella si attacchi, quindi girarla sotto sopra. Toglierla dal fuoco e farla delicatamente scivolare su un piatto.
La crespella, base per il nostro fagottino, ora è pronta!
Preparazione ripieno:
In una padella far rosolare a fuoco lento la cipolla a fette sottili, aggiungere gli asparagi già pelati e tagliati a rondelline; sfumare con ½ bicchiere di vino bianco, portare in cottura. Lasciare raffreddare gli asparagi e unirli alla ricotta fresca, al parmigiano e ai tuorli d’uovo. Amalgamare gli ingredienti tra loro, adagiare un cucchiaio del composto al centro della crespella. Per chiudere il fagottino è possibile utilizzare, per una decorazione più chic, una strisciolina di gambo di porro.
Infornare la crespella per 10 minuti a 170°, quindi guarnire con la salsa al Monte Veronese, ottenuta mescolando la panna al formaggio grattugiato e al tarfufo.
Servire e mangiare, accompagnando il tutto con un buon bicchiere di vino bianco Donna Francesca della Cantina Giovanni Ederle.

White asparagus dumpling on Monte Veronese cheese cream with black truffle
Ingredients for the crêpe:
3 eggs
250gr flour
½ l milk

Ingredients for the filling:
500gr white asparagus
200gr fresh Ricotta
100gr Parmigiano cheese
2 eggs yolk
1 blond onion
Cream ingredients:
½ l of double cream
200gr Monte Veronese cheese
black truffle to taste
Donna Francesca white wine
How to cook the crêpe:
In a bowl put the flour, a pinch of salt and ½ l milk. Mix all together to obtain an homogenized compound. Beat eggs and add them to the compound, and powerfully blend. Combine the soft butter and mix. Let the compound stand for half an hour.
Warm up a nonstick pan, and melt the butter in it; pour the preparation with the help of a ladle, rapidly rotating the pan to place it equally. Cook it for a minute, paying attention to the crêpe of not to stick, and turn it upside down. Remove it from fire and gently let it slide on a plate.
The crêpe, base of our dumpling, now is ready!
How to cook the filling:
In a pan, fry the cut thin onion until it becomes brown, add asparagus peeled and cut in little slices; simmer with ½ glass of white wine until reduces. Once cooked, let asparagus cool down and add them to the fresh Ricotta, the Parmigiano cheese and the eggs yolk. Mix all the ingredients together, and put a spoon of the compound in the middle of the crêpe. To close the dumpling in a chic way, it’s possible to use a leek stem’s stalk.
Put the dumpling for 10 minutes in oven at 170°, then garnish it with the cream, obtained by mixing the double cream with grated Monte Veronese cheese and the black truffle.
Serve and taste, matching the dish with a tasteful glass of Donna Francesca white wine, produced by the wine cellar Cantina Giovanni Ederle.
